Quick, COOL Cucumber Salad

Oh so easy Favorite Cucumber Salad. Perfect choice to add to barbecue menu.

It is finally Summer in Chicago and if you’re like me you’re looking for an easy and refreshing, almost rote summer dish. Favorite Cucumber Salad is what you need. It is so very easy, you’ll just need fresh cucumbers, onions, vinegar and seasonings. I usually slice the onions and cukes by hand, but if your food processor is on the counter and ready—you’ll have your salad ready to chill in about ten minutes!

Favorite Cucumber Salad

This summer refresher is one of my most requested recipes and perfect when you need a dish to take. 

3 medium to large cucumbers, thinly sliced

1 medium onion, thinly sliced

1 cup vinegar

1 cup sugar

11/2 tablespoons salt

1 teaspoon chopped dill (you may use dill seed in place of fresh dill)

1 teaspoon mustard seed

1 teaspoon celery seed

Layer  cucumber and onion in large mixing bowl.  Stir together vinegar, sugar, salt, parsley, dill, mustard seed, and celery seeds.  Pour vinegar mixture over cucumbers and onion.  Mix lightly.  Cover and chill several hours or overnight. YIELD: Approximately 8 to 10 servings.
